No offense Mark, but I'll bet that our crawfish are much more plentiful and much larger than your crawdads......and they are always prepared correctly down here...SPICY!!!

Besides, we probably have about 15 crawfish festivals throughout the Spring/Summer. ;)

Glad to see you have one though...

Its 5 tons of crawdads shipped up from Louisiana. So there! We are siphoning your supply. And the guy that started it is from Louisana so we are siphoning your cooks too. He moved up northwest jersey. The area where they are having it is really nice. Its only about 10 miles northwest of where I live. Scenic and lots of wildlife. When out that way fishing the paulinskill river I seen everything from black bear, deer, coyote, mink, foxes etc. Believe me, I know good creole cooking. I have these XXXHOT habanero potatoe chips I just ordered a case of. These guys claim to have the hottest chip for sale. I'm the only one I know that eats these things. Nobody at work or at home eat them. I wolf em down bags at a time. I start sweating and my eyes and nose start watering. These Death Rain potatoe chips are made right hear in Highlands New Jersey which is down the shore.
So some of us Jerseyans know hot n spicy too. The most populas thing in my garden. Hot cherry and Jalapeno peppers.

I dare you to order a case.

Should have known it was a Louisiana transplant who started it all and does the cooking, otherwise it wouldn't have been authentic! As far as siphoning our supply, good luck!!! 5 tons of crawfish wont make a dent in our supply down here....plus we can get them for only 49 cents a pound. :D

I am certainly glad to see that you like them though. When you eat them, your eyes and nose should be watering profusely....when that happens, they are cooked to perfection with the right amount of spice!

Thanks for the info on the chips!!! I have never heard of them and they sound great. I too, love spicy foods and will have to give them a shot.

Dreamer....hopefully we can take you up on your offer in the near future!!!

Maybe you can pass the word to those a$$holes who run Sav-A-Center in New Jersey what we like in the south, not that watered down crap they're trying to ram down our throat!

We will have a party for sure! We are quite a ways away from that though. It will probably be next Spring when we do it.

As far as building the house goes, it's not really that bad. You just have to stay on top of everything and everyone. When you're doing it yourself and still have to hold a full time job, it just takes up all of your time.

It will be SO worth it when it's done though!!!!
WOO HOO!!!!

That is the only thing I have a hard time with..... I am not a sissy-girl, but I will tell ya, the first time someone made me do that... with the first crack of the shell, my body just went YEOWWWWWWWWWWWW CRIPE!

And no one warned me they get cooked with their eyes still in!!!!

But I got over it, and chowed anyway!

Hey I miss you guys too. I have lost three days of hard recording due to allergies and sore throat. My album HAS to be complete for release for late JUly/Early Augest, or I will be in trouble.

I will be out of town for finals and mixing here in a bit, then we are going to do our best to get a tour rolling. New Olreans is a given, so is NY! Just having explodign drummer problems, worse comes to worse, I am lookin at hirin a couple boys, which means I will have to involve someone for tour support.

Big J says the the openers for festivals often get jacked as far as pay goes, but we would like to get in on a Zebra gig, if at all possible.

All depends where you catch the crawdads. The wallkill river in Northwest Sussex County New Jersey that runs through a old mineral mine in Franklin township has some humongous Crawdads. And the colors of their claws and shell are like all purple and red. Almost like luminescent. At first I thought they might be toxic crawdads or something. But they stock trout in this stream so it had to be clean. I just think it had to do with the mineral deposits in the water. And some of these ****ers were like 5-6 inches long. They would have this big claw that was twice the size of my thumb.
I use to catch them to feed my Oscars (cichlids) but the big ones they couldn't handle. And my cichlids where like 16 inches long and about 4 lbs a piece and could drop 4-5 medium size crawdads easily.

Other then that place, NO, I've never seen crawdads that big before up here.
